1 small cube fermented bean curd (optional if you don’t have it just skip it) 1 tbsp oyster sauce
1 tsp shaoxing wine (optional)
1/4 tsp white pepper
3 cloves garlic, chopped
1 lb boneless skinless chicken thighs, cut into 1” cubes frying oil 3/4 cup sweet potato flour Handful thai basil
Seasoning sprinkles powder:
1 tsp salt
1/2 tsp sichuan peppercorn, toasted and grind
1/2 tsp white pepper powder
1/4 tsp paprika & cayenne powder
How to make?
Marineted chicken + oyster sauce + wine vinegar + garlic + salt + pepper. Chill in the fridge for about 1 hours or over night.
Add sweet potato flour into chicken marinated.
Deep fried about 8 mind. Then deep fried again together basil leaf. About 5 muns or till golden and brown crispy.
SERVED with seasoning sprinkles powder on top or mix it together.
